Secreto, or “the pig’s secret” as it is also called, is a fairly unusual cut, but also one of the best pieces on the whole pig.

Secreto is cut out the Spanish way, hence the name.
The cut is very marbled, which makes it perfect for grilling hot & fast.

The pig’s secret works great with just salt and pepper, but here we choose to boost the flavor with some fresh herbs, wine and honey.

According to the Swedish Food Agency (Livsmedelsverket) you should take the piece up to about 158°F, but I think that’s ruining a really nice piece of meat.
Take it up to 149°F internal temperature at most, and maybe a little below that. For more guideline temperatures you can compare with our page on internal temperatures for pork.
The pig’s secret can happily be eaten a little pink.

You’ll find these nice pieces of Secreto at BBQLovers Kött & Gårdsbutik, which is open Fridays 11-18 and Saturdays 11-16
