A really tasty side that goes with most grilled dishes.
We made this recipe in Pigwings BBQ Team during the qualifier for this year’s Grill-SM
If you want more vegetables with a clear grilled flavor, grilled pak choi or whole grilled cauliflower also go well on the same platter.

You need:

  • Cocktail tomatoes on the vine
  • Canola oil
  • Balsamic vinegar
  • 1 garlic clove
  • 1 scallion
  • Salt & pepper

Here’s how:

  • Mix 50/50 canola oil and balsamic vinegar and pour into a small pan
  • Crush the garlic clove
  • Coarsely chop the scallion
  • Add salt & pepper
  • Add the tomatoes whole, with the vine still on.
  • Smoke at about 125 degrees Celsius for 15–20 minutes
  • Take them out of the oil and grill hot and very quickly over direct heat.
  • Serve with any grilled dish.
