You'll find more methods for low and indirect heat in the guide to grilling methods. It can be easy to buy it ready-made in the store, but surely it's more fun to use your own?It can also make a fun gift. You don't need much more here than bell peppers and wood chips. In this case I used a mix of hickory and cherry.Make sure you use organic bell peppers. You don't want any poison in there.Cut the bell peppers into suitably sized pieces.Put them in a grill pan.I use Weber's vegetable pan, which has holes in the bottom. That way as much smoke as possible reaches the peppers.Try to keep the temperature in the smoker as low as possible; if you can, about 120°F is great, but up to 100 also works, but no more.I let these smoke for 24 h, then I finished drying them in the oven at 120°F for about 24 h.Once they're completely dry, grind them in a mortar or a coffee grinder, depending on how fine a powder you want. You can also mix in some dried chili here if you want a bit of heat in the powder. Share this Facebook WhatsApp Email
