Pork collar is a fantastic grilling meat, and it turns out best when it’s given a long, slow cook.

A few weekends ago I decided to grill a piece of pork collar. The idea was pulled pork, but I didn’t quite have the time for it. Even so, I can’t say I was disappointed – quite the opposite. I started the grill at 10:00 in the morning and had bought some apple wood chips for the day, which had been soaking in water overnight. In rounds of about three hours I threw on the apple wood pieces, and at about 100 degrees Celsius the piece was left to luxuriate until around 18:00. The result was absolutely brilliant. If I’m being completely honest, I don’t think I’ve grilled a tastier, more flavorful piece of meat in all the years I’ve been cooking.

So how did I go about it?
