I’ll start with a word of warning.

This rub is not for the faint of heart.

It will bite you, give you a slap in the face and maybe even make your butthole bleed the next day. But for all of you who love heat, this one is really, really good.

Best used on pork, but it also works nicely on most things, for example chicken and beef.

In the recipe I use home-smoked chipotle made from Bhut Jolokia, which a few years ago was named the world’s hottest chili. There are varieties that have surpassed it today, but it’s still frighteningly hot.
